I pray that this finds you at a positive time of your day.&nbsp;If it is not positive then I do not know what to tell you.&nbsp;This IS the season to be festive.&nbsp;It is the season of joy.&nbsp;If you don t believe me go and look at your kids, your neighbors kids or the kids in the stores.&nbsp;Then you will see the meaning of joy (unless they can t get the item that they want).&nbsp;This year for the first time I saw something about Christmas that brought me real joy.&nbsp;You know how you donate money to the police or fire department for their  give a gift Campaign for underprivileged kids? Well a few weeks ago I saw the police and firemen in the store with the kids buying the gifts. I think that I smiled the whole time in the store because of the excitement these kids had.&nbsp;That to me is the Christmas spirit, a time to bring joy to those around you. </span></p> <p><span style='font-size:10.0pt;font-family:"Arial","sans-serif"'>So if you have been a reader of this newsletter for some years you know that this edition gives me a chance to rant a little.&nbsp;If this is your first Christmas with me well then I hope that you enjoy and don t get offended.&nbsp;Let me start off by saying Merry Christmas to you all.&nbsp;I know that this is politically incorrect, but I believe that it is right. I do not celebrate the holidays in December; I celebrate Christmas, the birth of Christ.&nbsp;So I will always say Merry Christmas. Not out of disrespect for anyone that doesn t celebrate Christmas, and I do not expect you to tell me the same if you do not celebrate it.&nbsp;Please feel free to reply to me in the greeting of your faith.&nbsp;My other pet peeve about this time is places not being able to display the nativity scene.&nbsp;Now I understand that you may not agree or believe in what it stands for, but just because it is present doesn t mean that you will be forced to change your faith.&nbsp;I have heard to many cases of schools not being able to celebrate because one parent does not want their child involved in the celebration.&nbsp;So we choose to disappoint the rest of the school do that we don t upset one parent.&nbsp;Please tell me what kind of sense that makes.&nbsp;We, as a people need to get back to the roots of our faith plain and simple. We can't deny its health properties, but we can't overlook the fact that most people have a harder time to enjoy raw kale than cooked kale. Why, because some people are more sensitive to bitterness than others. It is my case and in order to off-set such situation, I use sweet ingredients such as dried fruits, a sweeter vinegar with a buttery oil combination (olive oil and walnut oil) or a creamy type of salad dressing, and a sweeter type of cheese.<br> <br> 1 large bunch of kale, shredded as small as possible<br> 1/3 cup of chopped dried fruits (I like a combination of dried pear<br> mango, peaches, etc)<br> 6 to 8 baby carrots<br> shredded1/2 avocado, sliced<br> 1 garlic clove, minced<br> 1 lemon, juiced<br> 1 to 2 tablespoons apple cider vinegar<br> 1 tablespoon olive oil1 tablespoon walnut oil<br> 2 tablespoons of shredded cheese (Jarlsberg, Baby Swiss, or a young Fontina)<br> 2 tablespoons pumpkin seeds or walnuts<br> Salt and pepper to taste<br> <br> Place the kale in a bowl and add the lemon juice. Mix thoroughly and set aside for an hour. Remove kale and, by hand, press off extra lemon juice. Transfer the kale to a serving bowl and add the shredded carrots. In a small bowl, mix the apple cider and oils. Add the garlic and season to taste. Add the dressing to the kale and mix well. Divide among two plates.
